Ingredients (makes 8 tacos, serves 4)

For the blackened grouper:

  • 1.5 lbs fresh grouper fillets, cut into 8 portions
  • 2 tablespoons avocado oil or olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For the fresh slaw:

  • 3 cups shredded cabbage (green or a mix with purple)
  • 1/2 cup shredded carrot
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt

For the citrus crema:

  • 1/2 cup sour cream or Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 1 small garlic clove, finely grated
  • Pinch of salt

To serve:

  • 8 small corn or flour tortillas, warmed
  • Sliced avocado
  • Lime wedges
  • Extra cilantro
  • Hot sauce (optional)

Instructions

  1. Make the slaw. In a medium bowl, combine the shredded cabbage, carrot, and cilantro. Drizzle with lime juice and olive oil, sprinkle with salt, and toss well. Set aside while you prepare the fish. The slaw will soften slightly and become more flavorful as it sits.

  2. Make the citrus crema. In a small bowl, stir together the sour cream, lime juice, lime zest, grated garlic, and a pinch of salt. Taste and adjust seasoning. Cover and refrigerate until ready to serve.

  3. Prepare the blackening spice. In a small bowl, mix together the smoked paprika, garlic powder, onion powder, oregano, cayenne, salt, and black pepper.

  4. Season the grouper. Pat the grouper portions very dry with paper towels. Brush both sides lightly with oil, then generously coat each piece with the blackening spice mix, pressing it gently so it adheres.

  5. Cook the fish. Heat a large cast iron skillet or heavy nonstick pan over medium-high heat until very hot (a drop of water should dance and evaporate quickly). Add a thin layer of oil. Place the seasoned grouper portions in the pan without crowding. Cook for 3–4 minutes on the first side without moving them, until a dark crust forms. Flip carefully and cook for another 2–4 minutes on the second side, depending on thickness, until the fish reaches an internal temperature of 130–135°F and flakes easily. Remove to a plate and let rest for a couple of minutes. Flake into large pieces if desired.

  6. Warm the tortillas. While the fish rests, warm the tortillas in a dry skillet, on the grill, or wrapped in a damp towel in the microwave.

  7. Assemble the tacos. Spread a spoonful of citrus crema on each warm tortilla. Add pieces of blackened grouper, a generous helping of slaw, and sliced avocado. Finish with extra cilantro and a squeeze of fresh lime. Serve immediately with hot sauce on the side if desired.

Grouper is a firm, mild fish that holds up well to bold seasoning, but it can dry out if overcooked. Watch it closely and pull it as soon as it flakes. If you cannot find grouper, mahi-mahi or snapper make excellent substitutes. For outdoor cooking, this recipe works beautifully on a hot grill using a cast iron griddle or grill basket.
