Grilled Gulf Shrimp with Florida Citrus Butter

Ingredients (serves 4)

For the shrimp:

  • 1.5 lbs large Gulf shrimp, peeled and deveined (tails on or off)

  • 2 tablespoons olive oil or avocado oil

  • ½ teaspoon garlic powder

  • ½ teaspoon smoked paprika (optional, for color and depth)

For the Florida citrus butter:

  • 6 tablespoons unsalted butter

  • 3 cloves garlic, finely minced

  • Zest and juice of 1 large Florida orange

  • Zest and juice of 1 lime

  • 2 tablespoons fresh parsley, finely chopped

  • Pinch of red pepper flakes (optional)

  • Salt to taste

Instructions

  1. Prepare the shrimp. Pat the shrimp very dry with paper towels. In a bowl, toss them with olive oil, salt, pepper, garlic powder, and smoked paprika if using. Let them sit for 10–15 minutes while you prepare the grill and the citrus butter.

  2. Make the citrus butter. In a small saucepan over medium-low heat, melt the butter. Add the minced garlic and cook gently for 30–60 seconds until fragrant but not browned. Remove from heat and stir in the orange zest, lime zest, orange juice, lime juice, parsley, and a pinch of red pepper flakes if desired. Taste and add a little salt if needed. Keep warm.

  3. Preheat the grill. Heat your grill to medium-high (around 400–450°F). Clean and oil the grates well. Shrimp can stick, so good oiling is important.

  4. Grill the shrimp. Place the shrimp on the grill in a single layer. Cook for 2–3 minutes per side, depending on size, until they are pink, opaque, and have nice grill marks. Do not overcook — shrimp become tough when cooked too long.

  5. Finish and serve. Remove the shrimp to a serving platter or bowl. Drizzle generously with the warm Florida citrus butter. Toss gently to coat. Serve immediately with extra butter on the side for dipping, along with rice, grilled vegetables, or a simple green salad.
